Makes 4 king size burgers or 5 medium.
Ingredients500g/1 lb lean minced beef 1 onion finely chopped 1 egg good handful thyme chopped 1 tsp mustard ½ tsp of dried chilli flakes 2 heaped tbsp breadcrumbs salt and pepper Olive or vegetable oil blue cheese (Stilton, Roquefort, or St Agur(favourite!))
1. Fry the chopped onion with the chilli flakes for about 6 minutes in a dash of oil, then mix all the ingredients together and squeeze into balls. Flatten into burger shapes. Grill for 7 minutes on each side under medium grill heat. Top with a knob of blue cheese for the last 2 minutes under the grill.
2. Serve with mashed potatoes, peas and fried onions.
It is easy to make breadcrumbs in a food processor or chopper. 1 slice of bread including the crust will make enough for this recipe. To add extra flavour and texture, I prefer to make the breadcrumbs from a brown granary or brown seeded loaf - it adds the wow factor!
